
Ingredients:
• 4 cups – musk melon, cut into cubes
• 250 ml – pure Grape juice (no added sugar)
• 1/2 tin – condensed Milk
• 1 tbsp – Lime juice
• 2 cups – curds
• 1 cup – Sugar
• 1 cup – Banana
Method:
- Line a colander with thin muslin and pour the curd in it. Let the whey drain until 1 cup of thick curd cheese is left in the colander.
- Place the sugar in a thick-bottom saucepan.
- Sprinkle 2 tbsp of water.
- Heat until the sugar dissolves and turns a rich caramel colour (do not stir).
- Add 1/2 cup of water and heat gently, stirring until a honey like syrup is formed. Let the caramel syrup cool.
- Beat the curd cheese smooth.
- Blend 1.5 cups of musk melon with the caramel syrup until smooth.
- Mix the curd cheese with musk melon puree.
- Add rest of the ingredients and the remaining melon cubes and bananas.
- Serve chilled.
