Ingredients:

• 1 bunch – cilantro.
• 1 box – rotini or penne (pasta).
• 1 – green chilli.
• 1/2 cup – parmesan cheese.
• 1/4 cup – pine nuts.
• 3/4 cup – extra virgin Olive oil.
• 1 bunch – asparagus.
• 1 – zucchini.
• 1/4 cup – peas.
• Salt and pepper to taste.

Method:

  1. Roast the nuts until fragrant and keep aside. In a food processor, add cilantro, parmesan cheese, chilli and mix. Add oil while mixing until it is of the desired consistency.
  2. Add salt and pepper.
  3. In a big pot, heat salt and water and cook the pasta as per the directions on the pack.
  4. Before 2-3 mins of cooking pasta, add the vegetables and drain the pasta. Mix the sauce with the pasta in a serving bowl.
