
Ingredients:
• 400 gms – rice, washed and soaked for 30 mins.
• Salt to taste
• 150 gms – mixed vegetables (diced carrots, green peppers, beans, etc.)
• 1 large onion, sliced
• 3 tsp – crushed Garlic
• 5 tsp – grated Ginger
• 2 tbsp – oil
• 50 gms – Prawns (optional)
• 50 gms – cooked Chicken bits (optional)
• 2 eggs
• 1 tsp – Tabasco sauce (or to taste)
• 3 tbsp – soya sauce
• Ground black pepper to taste
Method:
- Wash, soak and drain the rice, then boil it in fresh water, adding salt to taste, until just cooked (about 40 mins.)
- Drain and rinse.
- Stir fry the vegetables with the onion, garlic and ginger and put aside.
- Stir fry the prawns and chicken bits (if using) and put aside.
- Scramble the eggs and put aside.
- Put all the ingredients except the rice, eggs and black pepper into the fry-pan, stir and heat gently.
- Carefully mix all the ingredients into the rice and serve.
