Ingredients:

• 1/2 kg – mutton, cubed, boneless
• 2 long pieces Cinnamon
• 4 Cardamoms
• 2 Bay Leaves
• 4 Cloves
• 2 cups basmati rice, washed, drained
• 1 tsp – chilli powder
• 1/2 tsp – Cumin seeds
• 2 tbsp – Ghee
• Salt to taste

Method:

  1. Boil meat with whole spices and salt in 1.5 litres of water.
  2. Pressure cook if necessary.
  3. Remove meat and reserve.
  4. Heat two tbsps ghee.
  5. Add rice and meat.
  6. Add cumin seeds, chilli powder and salt if needed.
  7. Add the meat stock and water to make the level 2 cm. above the level of rice.
  8. Fix lid tightly and cook slowly till rice is done and fluffy.
