Ingredients:
• 1 kg – Chicken pieces
• 2 tsp -soy sauce
• 2 tsp-vinegar
• 1 clove-garlic, minced
• 8-10 – green chillies, split down the middle (but still joined)
• 1/3 cup- oil
Method:
- First cut the chicken pieces into smaller pieces (drumsticks in half, thighs in half, and leave wings as they are).
- Then marinate the chicken pieces with the soy sauce and vinegar.
- Make sure all the chicken pieces are covered.
- Add the chillies. Cover and put in fridge for 10 minutes.
- Heat oil in a frying pan. Slowly add chicken pieces (shake off marinade first).
- Cover the pan and cook. Occasionally, turn the pieces so they brown well.
- After all the pieces are done, take them out.
- Put in the garlic and fry until golden brown.
- Add the chicken pieces. Then add the soy sauce and vinegar marinade mixture.
- Stir and cover; let it cook for about 20 minutes or until the sauce begins to thicken.
- Then take off heat and serve over white rice.
