Ingredients:

• 1 – whole pomfret.
• 1 tbsp – roughly chopped garlic.
• 1/2 tbsp – crushed peppercorn.
• 2 tbsp – refined oil.
• 1 tbsp – light soya sauce.
• 1 tsp – salt.
• 1 tbsp – Corn flour paste.
• 1 cup – Chicken stock.

Method:

  1. Dust the fish with corn flour.
  2. Deep fry till golden brown and keep aside.
  3. Heat oil in a pan, add crushed peppercorn and saute.
  4. Add roughly chopped garlic and saute.
  5. Add chicken stock and light soya sauce.
  6. Check seasoning and thicken with corn flour slurry.
  7. Coat the fish and serve garnished with coriander.
