
Ingredients:
• 1 cup – all-purpose flour
• 1/2 cup – Corn flour
• 1/2 cup – whole Wheat flour
• 1/2 tsp – Cardamom powder
• 1 tsp – baking soda
• 1 tsp – baking powder
• 1/4 tsp – salt
• 1-2 cup – Butter /Canola Oil
• 1/2 cup – Brown sugar
• 1/4 cup – tutti fruitti + I table spoon all-purpose flour
Method:
- Add the dried fruits to 1 tbsp dried flour mixture and mix well till they are well coated and keep it aside.
- Preheat the oven to 350 F or at 180 degree.
- Sift all the dry ingredients; flour, baking soda, baking powder, salt and cardamom powder.
- Add sugar and oil /butter.
- Add the floured tutti fruit and knead a dough.
- Make a log of the dough and keep it aside for 10 minutes.
- Shape each portion into a log about 8-10 inches long.
- Bake the log for 20-25 minutes, until they turn brown around the edges.
- Remove them from the oven and let it rest for at least 20 minutes.
- Lower the oven temperature to 325F.
- Carefully cut the cooled logs into slices.
- Bake the rusk once again for 20-25 minutes, until they are dry and crisp.
- Remove them from the oven and cool.
