Ingredients:

• Potatoes – 2 big
• Cucumbers – 3
• Tomato – 1 (big)
• Green peas – 1/4 cup
• Green chillies – 5
• Mint – 3 stalks
• Coriander – to garnish
• Grated Coconut – 4 tbsp
• Garam Masala – 1/2 tsp
• Red Chilli powder – 1/2 tsp
• 3 tsp – oil

Method:

  1. Grind mint, chillies, peas and 2 tbsp coconut powder by adding little water.
  2. Grate 2 cucumbers and cut one into big chunks.
  3. Peel the potatoes and cut into big chunks.
  4. Put the whole tomato, the grated cucumber and potato chunks in a pressure cooker with a little water and 2 tbsps coconut powder and cook for 2-3 whistles.
  5. When it is cool, remove tomato skin and mash with a spoon.
  6. Heat oil in a kadai, splutter, jeera and mustard. Add ground mint and the cooked vegetables.
  7. Cook for some time on medium heat till it reaches required consistency.
  8. Add salt, chilli powder, garam masala, and cook for another minute. Garnish with coriander leaves.
