
Ingredients:
• Potatoes – 2 big
• Cucumbers – 3
• Tomato – 1 (big)
• Green peas – 1/4 cup
• Green chillies – 5
• Mint – 3 stalks
• Coriander – to garnish
• Grated Coconut – 4 tbsp
• Garam Masala – 1/2 tsp
• Red Chilli powder – 1/2 tsp
• 3 tsp – oil
Method:
- Grind mint, chillies, peas and 2 tbsp coconut powder by adding little water.
- Grate 2 cucumbers and cut one into big chunks.
- Peel the potatoes and cut into big chunks.
- Put the whole tomato, the grated cucumber and potato chunks in a pressure cooker with a little water and 2 tbsps coconut powder and cook for 2-3 whistles.
- When it is cool, remove tomato skin and mash with a spoon.
- Heat oil in a kadai, splutter, jeera and mustard. Add ground mint and the cooked vegetables.
- Cook for some time on medium heat till it reaches required consistency.
- Add salt, chilli powder, garam masala, and cook for another minute. Garnish with coriander leaves.
