Ingredients:
• 3 medium – zucchini, peeled sparingly
• 1 – onion, thinly sliced into rings
• 1 tbsp – ginger, chopped very finely
• 1 tbsp – finely scraped Coconut
• 1 – green chilli, finely chopped
• 1 tbsp – soya sauce
• 1/4 tsp – Sugar
• 1 pinch – Turmeric powder
• Salt to taste
• 1 tbsp – Butter or oil
Method:
- Slice zucchini into thin rounds. Sprinkle salt and a handful of water.
- Heat oil, and saute ginger and chillies.
- Add onions, zucchini slices, coconut, stir fry till done.
- Add salt, soya sauce, turmeric, sugar, stir and cook for 2 minutes.
- Serve hot .
