Ingredients:

• 3 medium – zucchini, peeled sparingly
• 1 – onion, thinly sliced into rings
• 1 tbsp – ginger, chopped very finely
• 1 tbsp – finely scraped Coconut
• 1 – green chilli, finely chopped
• 1 tbsp – soya sauce
• 1/4 tsp – Sugar
• 1 pinch – Turmeric powder
• Salt to taste
• 1 tbsp – Butter or oil

Method:

  1. Slice zucchini into thin rounds. Sprinkle salt and a handful of water.
  2. Heat oil, and saute ginger and chillies.
  3. Add onions, zucchini slices, coconut, stir fry till done.
  4. Add salt, soya sauce, turmeric, sugar, stir and cook for 2 minutes.
  5. Serve hot .
