
Ingredients:
• Brinjals – 1/2 kg
• bread crumbs – 1/2 cup
• grated cheese – 1/2 cup
• chopped Coriander leaves – 3 tbsp
• roasted Peanuts – 2 tbsp, chopped
• chopped Onion – 3/4 cup
• Garlic – 1 tbsp, chopped
• peeled and chopped Tomatoes – 1/2 cup
• green chilies 2 to 3, chopped
• oil – 1 tbsp
• oil to deep fry
• pepper to taste
• salt to taste
Method:
- Cut brinjals in halves, lengthwise.
- Make cuts on the flesh, sprinkle with salt and set aside, cut side down wards.
- After ½ hr, rinse and pat dry.
- Scoop out the pulp and deep fry the shells in hot oil.
- Drain on kitchen paper.
- Heat 2 Tbsp of oil in a kadai.
- Add onion, garlic and chilies. Fry till fragrant.
- Add scooped brinjal pulp and cook till it is soft.
- Add tomatoes and cook for 2-3 minutes.
- Add salt, pepper, coriander leaves and peanuts.
- Mix well and remove from fire.
- Stuff the fried shells with the filling and arrange them on a microwave safe plate.
- Combine bread crumbs with cheese and sprinkle on top.
- Microwave on full power till the cheese melts, about 1-2 minutes.
- Serve hot.
