
Ingredients:
• 200g – Cucumber with yellow skin (curry variety)
• Salt
• 1/2 tbsp – oil
• 4 Green chilli
• 1/2 tsp – Jeera
• 4 peeled Garlic Cloves
• 1/4 tsp – Mustard Seeds
• 1 tsp – Tamarind paste
Method:
- Peel cucumber, cut into half inch pieces, keep aside.
- Prick the chillies with a needle.
- Heat oil (1/4 tbsp), add cucumber pieces and fry for 3 min and remove.
- In the same pan, add remaining oil, mustard seeds, jeera, garlic cloves.
- Fry till seeds crackle, add green chilli, salt and fry for 2 mins.
- Remove from fire and grind this with tamarind paste and half the quantity of fried cucumber pieces into a coarse paste.
- Add the remaining cucumber pieces and run mixer for a second before removing.
- Serve this chutney with hot rice (of course with a spoonful of desi ghee).
