Ingredients:

• 250 g – beaten rice, thin Poha
• 1 cup – shredded Coconut
• 1/2 cup – roasted Peanuts
• 10 – chillies, chopped
• 1 tbsp – Lemon juice
• 1/2 cup – Coriander leaves
• 1 tbsp – Sugar
• 2 tbsp – oil
• 1 tsp – Mustard Seeds
• Salt to taste

Method:

  1. In a mixing bowl, sprinkle water on the poha and mix well.
  2. Add coconut, peanuts, lemon juice, sugar and salt.
  3. Heat oil in a pan and add mustard seeds.
  4. After the seeds crackle, add chillies.
  5. Pour this oil (tadka) on the poha and mix well.
  6. Garnish it with coriander leaves.
  7. Keep the poha in a container covered with a tight lid for about half an hour to ensure they are soft before serving.
