Ingredients:
• 3 cups – Rice (cooked)
• 1 bunch (big) – Coriander
• 1/4-inch piece – Ginger
• 5-6 Cloves – Garlic
• 1 small cup – Coconut (fresh not dry, cut into small pieces)
• 2-3 tbsp – Oil
• Salt – to taste
• A pinch – Turmeric powder
• 2 tbsp – Lime Juice
• 5-6 – Cashew nuts (broken into pieces and fried in ghee)
• 1 tsp – Jeera
• 1 tsp – Mustard
• 1 tsp – Moong Dal
• 3-4 – Green chillies (chopped)

Method:
- Chop the coriander.
- Make a fine paste with the coriander leaves, ginger, garlic, and coconut.
- Heat oil in a pan.
- Fry mustard, jeera, and moong dal.
- Then add the green chillies.
- Sautee a little and then add the ground paste.
- Sautee again and then add salt and turmeric powder.
- Sautee for about half a minute, and then add the cooked rice.
- Mix well till the rice turns into a beautiful green colour.
- Cover and cook on low flame for a few minutes.
- Then add lime juice and mix.
- Garnish with cashew nuts.
- Serve hot.
