Ingredients:
• 8 hard-boiled eggs (quartered)
• 1/4 cup – Butter
• 1/4 cup – flour
• 1.5 cups – Milk
• 1/2 cup – thick Cream
• 2 tbsp – finely chopped Coriander leaves
• 1 tsp – chilli powder
• 1 cup – minced Capsicum
• 1/2 cup – minced Onions
• Salt and pepper to taste
Method:
- Melt the butter in a saucepan and remove from the fire.
- Blend in the flour and gradually add the milk and cream.
- Return pan to fire and stir constantly until it thickens.
- Add all the remaining ingredients and stir well.
- Makes 4 servings.
