Ingredients:

• 200g – bhendi
• 1/2 cup – Corn flour
• 1/2 cup – besan
• 1.5 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – chaat masala
• 1 tsp – pepper powder
• Oil – 2 tbsp
• Salt – to taste

Method:

  1. Slit bhendis in the centre. Mix salt and pepper powder and apply it to the bhendi.
  2. Mix besan, corn flour, chilli powder, hing (optional), turmeric, and salt. Then, add water and mix to make a thick batter, like for pakoras.
  3. Heat oil, dip each bhendi in the batter, and deep-fry till crisp.
  4. Sprinkle chaat masala over the fried bhendi and serve as a snack or a side dish with rice and dal.
