Ingredients:

• Musk melon – 3 cup, peeled and chopped
• vanilla flavored soya Milk – 4 cup
• fresh bread crumbs – 1 cup
• Dates – 1 cup, chopped
• Butter – 2 tbsp
• Sugar – 2 tbsp

Method:

  1. Melt butter in sauce pan.
  2. Add bread crumbs and sugar.
  3. Cook stirring till sugar caramelizes and coats the crumbs.
  4. Cool and store in air tight container.
  5. Cook dates with 1.5 cup of water on low heat till soft.
  6. Cool and blend with chilled Soya milk.
  7. Add melon cubes and keep in refrigerator.
  8. Just before serving, pour in bowls and sprinkle with caramelized bread crumbs.
