
Ingredients:
• 1 kg – king Prawns (peeled and deveined).
• 1.5cup – Lemon juice.
• 400 g – whole tomatoes, peeled.
• 1.5 cup – Coconut milk.
• 1.5 cup – chopped coriander leaves.
• 2 cubes – Maggi Chicken cubes.
• 3 tbsp – oil.
• 1 – onion, chopped.
• 1 Clove – garlic, crushed.
• 2 tsp – hot chilli sauce.
• 3 extra tbsp – oil.
• 1.5 tsp – salt.
• 1.5tsp – cracked black pepper.
Method:
- Sprinkle prawns with lemon juice and stand for 1 hour. Drain off juice and reserve.
- Heat oil in pan, add onions and cook for 7 mins.
- Add garlic and cook for a further 2 mins.
- Add undrained tomatoes, Maggi chicken stock cubes, hot chilli sauce and reserved lemon juice, then cook for 5 mins.
- Stir in the coconut milk and return to the boil.
- Heat extra oil in a separate pan, add prawns, salt, pepper and cook for 3-5 mins.
- Pour sauce into a warm serving dish, add prawns and sprinkle with coriander leaves.
