Ingredients:

• 1 1/4 cup – crushed Wheat
• 500 g – Chicken breast, chopped into medium size pieces
• 1 cup – water
• 1/4 cup – fruit chutney
• 1 tbsp – Butter
• 3 tbsp – oil
• 2 tbsp – chopped Coriander leaves
• 1 tbsp – chopped fresh Mint
• 2 tsp – grinded fresh Ginger
• 1 Clove – garlic, crushed
• 1/2 tsp – Red Chilli powder
• 1 and a half tbsp – white Vinegar

Method:

  1. Bring water to a boil in a pan, add the crushed wheat and butter.
  2. Stir, cover for 1 min. and remove from heat.
  3. Keep covered, let stand for 6-8 mins. or until water is absorbed.
  4. Add the chopped coriander and stir. Keep aside.
  5. Heat the oil in a wok.
  6. Stir-fry the chicken in batches, until tender. Keep aside.
  7. Return all the stir fried chicken back into the wok.
  8. Add mint leaves, ginger, garlic, red chillies, chutney and vinegar.
  9. Stir and cook until mixture boils and thickens.
  10. Stir in the cooked crushed wheat just before serving. Serve hot.
