
Ingredients:
• 1 1/4 cup – crushed Wheat
• 500 g – Chicken breast, chopped into medium size pieces
• 1 cup – water
• 1/4 cup – fruit chutney
• 1 tbsp – Butter
• 3 tbsp – oil
• 2 tbsp – chopped Coriander leaves
• 1 tbsp – chopped fresh Mint
• 2 tsp – grinded fresh Ginger
• 1 Clove – garlic, crushed
• 1/2 tsp – Red Chilli powder
• 1 and a half tbsp – white Vinegar
Method:
- Bring water to a boil in a pan, add the crushed wheat and butter.
- Stir, cover for 1 min. and remove from heat.
- Keep covered, let stand for 6-8 mins. or until water is absorbed.
- Add the chopped coriander and stir. Keep aside.
- Heat the oil in a wok.
- Stir-fry the chicken in batches, until tender. Keep aside.
- Return all the stir fried chicken back into the wok.
- Add mint leaves, ginger, garlic, red chillies, chutney and vinegar.
- Stir and cook until mixture boils and thickens.
- Stir in the cooked crushed wheat just before serving. Serve hot.
