
Ingredients:
• 1/2 kg – tender small bitter ground
• 1 cup – Tamarind juice
• 2 tsp – chilli powder
• 1 tsp – Turmeric powder
• 1 tsp – Ginger and Garlic paste
• A few – Curry leaves
• Salt to taste
• 2 tbsp – oil
• 1 tsp – cumin powder
• 2 tbsp – Sugar
• 2 – Onions chopped.
Method:
- Scrape the bitter gourd and cut them into medium size slices.
- Soak them in salt water for about 2 hours.
- Heat oil in pan and fry the onions till light brown.
- Add the ginger and garlic paste and saute for a few minutes.
- Add the chilli powder, cumin powder, curry leaves, turmeric powder, and fry for some time.
- Drain the water from the bitter gourd and add it to the masala. Keep frying for a few minutes.
- Now add the salt, sugar and tamarind juice and simmer on low heat till the bitter ground is cooked and the gravy is thick.
- Serve.
