Ingredients:

• 100 to 150 g – Butter
• 500 g – Ginger biscuits
• 500 ml – Cream
• 100 g – Sugar
• 4 – Bananas
• 50 g – ginger, chopped
• Juice of 1 Lemon

Method:

  1. Put the butter to melt in a heavy pan over low heat while you make the biscuit crumbs.
  2. Put the biscuits in a plastic bag and place the bag in a towel.
  3. Crush them with a rolling pin.
  4. Stir the butter into the crumbs until you have a stiff paste.
  5. Press the buttered crumb mixture into a circle in the middle of a dinner plate. Press down firmly. Chill.
  6. Whip up the cream and sugar until it holds its shape. Mix in the chopped ginger.
  7. Peel, scrape and slice the bananas. Turn them in the lemon juice.
  8. Fold them into the whipped cream and pile them onto the chilled biscuit crust.
