
Ingredients:
• 5-6 medium potatoes, boiled and cut into cubes of one inch.
• 2 tbsp – oil.
• 1 tbsp – til (sesame).
• 1/2 tbsp each – coriander powder, chilli powder, fennel powder, dried Mango powder, cumin powder.
• 4-5 – curry leaves.
• 3 tbsp – fresh coriander, chopped.
• 1 tsp – salt.
Method:
- Heat oil in a thick-bottomed non-stick frying pan and add curry leaves in it. Fry for a minute on low fire.
- Add all the ingredients (except coriander leaves) and the cut potatoes and mix it thoroughly, till all the potatoes are coated with the masala.
- Keep on low fire and cook till potatoes look brown and roasted.
- Add fresh coriander and mix it again.
