
Ingredients:
• 1.5 cup – plain flour
• 3/4 tsp – coriander powder
• 1/2 tsp – cumin powder
• 1.5 tsp – baking powder
• 1 can creamed Corn
• 1 can Corn kernels, drained
• 1 spring onion, finely chopped
• 2 small eggs, lightly beaten
• 1/4 cup – or 1/2 cup – Milk
• 2.5 tbsp – chopped chives or coriander
• Salt and pepper to taste
• Oil for shallow frying
Method:
- Sift the baking powder, flour, coriander powder and cumin powder into a medium bowl, make a well in the centre and add the creamed corn, salt and pepper to taste. Mix and combine well.
- Heat the oil in a non-stick frying pan. Take heaped spoonful of mixture and drop into the pan; slightly press down and flatten with a spatula.
- Shallow fry few fritters at a time.
- Brown the fritters on both sides.
- Remove on absorbent paper towels.
