
Ingredients:
• 3 eggs
• salt to taste
• oil
• Grind to a fine paste:
• 3 tbsp – chopped Coriander leaves
• 2 Cloves – Garlic
• 1 tsp – Cumin seeds
• 1 small ball – Tamarind
• 3 Green chillies
• 1 small Onion
• 3 tbsp – grated Coconut
• 1/4″ piece Ginger
Method:
- Beat the eggs well together, then blend in the ground masala paste. Add salt
- Heat the oil in a frying pan and pour in one-quarter of the egg mixture.
- When set, fold in half and keep on a warm dish.
- Repeat this process with the next quarter of the mixture and so on, until the mixture is over.
- Serve immediately.
