Ingredients:

• For the dressing:
• 1/2 cup – low fat mayonnaise
• 1/2 cup – low fat Yoghurt
• 1 tsp – vanilla essence
• 1/4 tsp – grated Ginger
• 1/4 tsp – powdered Cinnamon
• For the salad:
• 2 cups – cubed, steamed Chicken
• 2 cups – seedless green Grapes
• 1 cup – chopped Celery
• 2 cups – fresh pineapple, cubed (reserve the shell for serving)
• 1/2 cup – finely chopped red Capsicum

Method:

  1. Combine all the salad ingredients, except pineapple, in a large bowl and set aside.
  2. Combine all the dressing ingredients in a small bowl.
  3. Pour the dressing over the salad.
  4. Cover and refrigerate for at least 1 hour.
  5. To serve:
  6. Line a tray with plantain leaf or lettuce.
  7. Place the pineapple shell on it.
  8. Add the chopped pineapple into salad. Toss well.
  9. Spoon the salad into the pineapple and serve.
