
Ingredients:
• 2 eggs
• 2 large round Brinjals
• 2 tbsp – chopped Coriander leaves
• Salt to taste
• Oil
• 1/2 tsp – Turmeric powder
• 1/2 tsp – chilli powder
• 1/4 tsp – Garam Masala powder
Method:
- Wash and dry the brinjals.
- Cut into rounds of 1.25 cm (1/2 “) thickness.
- Prong well with a fork.
- Make a mixture of the chilli powder, turmeric powder and salt and smear onto both sides of each slice of brinjal.
- Keep aside for 1 hour. Heat the oil in a frying pan and fry the brinjal slices on both sides.
- Arrange these on a baking dish.
- Sprinkle each slice with some garam masala and coriander leaves. Beat the eggs and add salt to taste.
- Pour over the brinjals and bake in a moderate oven at 177 degrees C until the eggs are set.
- Sprinkle with some more coriander leaves and serve immediately.
- Makes 2 servings.
