Ingredients:
• For boiling:
• 24oz – dry fruits mix (4.5 cups)
• 1.5 cups – Sugar
• 8oz – Butter / margarine
• 2.25 level tsp – bicarbonate of soda
• 1.5 cups – boiling water
• For baking:
• 3 cups – sifted white flour (cake flour)
• 3 – beaten eggs
• 2 tsp – baking powder
• brandy
Method:
- Boil the ingredients mentioned under boiling together for 20 minutes.
- Cool, then add the ingredients mentioned under baking.
- Mix all, preferably with a wooden spoon or hand.
- Bake for 1.5 to 3 hours (depending on the size of your cake tin) at 300 degrees F.
- Sprinkle liberally with brandy after taking off from oven.
