Ingredients:
• 1/2 kg – ivy gourd/kovakkai
• 1 – Onion
• 1 – Tomato
• 1 tbsp – Red Chilli powder
• 2 tbsp – coriander powder
• 1 tsp – Turmeric powder
• Asafetida, a pinch
• Salt to taste
• For tempering:
• Oil for frying
• 1 tsp – Mustard Seeds
• 1 tsp – Cumin seeds
• 1 tbsp – Black gram dal
• Curry leaves, a small quantity
Method:
- Wash and cut kovakkai lengthwise and slit into two pieces.
- Heat oil in a pan/kadai and splutter mustard seeds, black gram dal (split), curry leaves and hing.
- Then add onion and tomato and fry for some time.
- Add kovakkai, red chilli powder, coriander powder, turmeric powder and a little salt and fry for 10 minutes till the vegetable is cooked well.
- Serve hot.
