Ingredients:

• 1 tbsp – fresh Lemon juice
• 2 tbsp – light Cream cheese (with roasted garlic)
• 2 tsp – chopped fresh Mint leaves
• 2 tbsp Olive oil
• 1 – Cucumber peeled and diced
• 1 – large ripe Tomato, coarsely chopped
• 1/2 cup – chopped onion, 2 cups – shredded Cabbage
• 1/3 cup crumbled ricotta cheese
• salt
• 1/4 tsp – fresh ground pepper
• 2 large size wraps (warmed)

Method:

  1. In a large bowl combine lemon juice, parmesan cheese, mint and mix well.
  2. Add olive oil, diced cucumber, onion, tomato, cabbage and ricotta cheese and mix well
  3. Season with pepper and salt.
  4. Spoon half of the salad mixture onto the lower third of the wrap. (Make sure the filling does not reach the edge of the wrap. )
  5. Fold in both sides of the wrap and roll up the wrap.
  6. Toast the wrap on a grill for 1 minute
  7. Cut in half and serve immediately.
