Ingredients:

• 4 – large eggplants cut in small cubes
• 4 – large Onions cut in 2 inch strips
• 6 – Tomatoes cut in small slices
• 2 – Lemons (extract juice)
• 1 cup – fresh Coriander leaves
• 4 – Green chillies
• 1 tbsp – salt

Method:

  1. Deep fry eggplant until dark brown.
  2. When they start to brown, stir gently.
  3. When done, set aside fried eggplants.
  4. Pat the fried eggplant with a paper towel to absorb excess oil.
  5. Add onions, tomatoes, chillies, coriander, lime juice and salt to the eggplant.
  6. Mix gently.
  7. Garnish with a little fresh coriander and chillies.
  8. Serve hot.
