Ingredients:
• 6 – Bitter gourds
• 5 – Red Chillies
• 1 tsp – Tamarind extract
• 1/2 cup – jaggery.
• Ginger – a little.
• Asafoetida – a pinch
• 2 tbsp – vegetable oil
• 1 tsp – mustard.
• For the powder:
• 1 tbsp – Coriander seeds
• 2 tbsp – Peanuts
• 1/2 cup – grated Coconut
• 1 tsp – Cumin seeds
Method:
- Roast the ingredients to be ground in a pan in medium flame and powder it and keep aside.
- Take oil in a pan, splutter mustard, add cut bitter gourd and fry till it becomes light golden brown.
- Then add the red chillies, asafoetida, ginger and mix well with the powder.
- Now add the tamarind water, boil till the gravy thickens.
- Add jaggery and boil for another two minutes and remove from heat.
