Ingredients:

• 6 cups – Chicken stock
• 2 cups – fresh peas
• 1 cup – Cream
• 3/4 cup – onions, chopped
• 1/2 cup – chopped Mint
• 1/4 cup – chopped Celery
• 3/4 tsp – ground Cloves
• 2 Bay Leaves
• 2 tbsp – Lemon juice
• salt and pepper

Method:

  1. Boil peas in chicken stock until the peas are tender.
  2. Add the chopped onions, chopped celery, ground cloves, bay leaves, chopped mint, salt and pepper.
  3. Boil until the onions are tender, then sieve and chill.
  4. Add the cream and lemon juice to the soup before serving.
  5. Garnish with mint sprigs.
