Ingredients:
• 6 cups – Chicken stock
• 2 cups – fresh peas
• 1 cup – Cream
• 3/4 cup – onions, chopped
• 1/2 cup – chopped Mint
• 1/4 cup – chopped Celery
• 3/4 tsp – ground Cloves
• 2 Bay Leaves
• 2 tbsp – Lemon juice
• salt and pepper
Method:
- Boil peas in chicken stock until the peas are tender.
- Add the chopped onions, chopped celery, ground cloves, bay leaves, chopped mint, salt and pepper.
- Boil until the onions are tender, then sieve and chill.
- Add the cream and lemon juice to the soup before serving.
- Garnish with mint sprigs.
