Ingredients:

• 100 g – Dates or dried apricot, finely chopped.
• 2 – medium Pineapples or a can.
• 2 – Kashmiri chillies.
• 1 – lime, juiced.
• 1 – Ginger piece, 2 inch, chopped.
• 1 cup – sugar.
• 1 tbsp – salt.
• large pinch – panch phoron (aniseed, cumin seed, mustard seed, Onion seed and Fenugreek seeds).

Method:

  1. Heat a tbsp of oil and season with panch phoron and Kashmir chillies.
  2. Add pineapple and cook on full heat.
  3. Add chopped dates or apricots, chopped ginger, sugar and salt.
  4. Cook until the pineapple cubes are soft.
  5. Add lime juice when cooked.
