Ingredients:
• 1/2 cup – plain flour
• 1/2 tsp – baking powder
• 1/8 tsp – baking soda
• 1/8 tsp – salt
• 1/8 tsp – Cinnamon
• 1/8 tsp – Nutmeg
• 1 tbsp – white Butter
• 1/2 cup – ripe Banana
• 3 tbsp – granulated Sugar
• 1 – Egg
• 1 tbsp – Milk
• 50 g – dark sweet Cherries (chopped and pitted)
• 4 tbsp – chopped nuts (soaked and peeled almonds)
Method:
- Mix the dry ingredients in a small bowl and set aside.
- Put the white butter in a large casserole and cook for 30 seconds on HIGH so that it melts.
- Add banana, sugar, egg and milk to the butter and mix well.
- Add this mixture to the mixture of dry ingredients and mix again.
- Add cherries and nuts.
- Pour the batter into the casserole.
- Cook for 5 mins on HIGH, giving the dish a half turn halfway through the cooking time.
- Place the dish aside to for 5 mins to cool.
- Place a plate over the casserole and turn the cake over onto the plate.
- Turn the cake right-side up.
