Ingredients:

• 1/2 cup – plain flour
• 1/2 tsp – baking powder
• 1/8 tsp – baking soda
• 1/8 tsp – salt
• 1/8 tsp – Cinnamon
• 1/8 tsp – Nutmeg
• 1 tbsp – white Butter
• 1/2 cup – ripe Banana
• 3 tbsp – granulated Sugar
• 1 – Egg
• 1 tbsp – Milk
• 50 g – dark sweet Cherries (chopped and pitted)
• 4 tbsp – chopped nuts (soaked and peeled almonds)

Method:

  1. Mix the dry ingredients in a small bowl and set aside.
  2. Put the white butter in a large casserole and cook for 30 seconds on HIGH so that it melts.
  3. Add banana, sugar, egg and milk to the butter and mix well.
  4. Add this mixture to the mixture of dry ingredients and mix again.
  5. Add cherries and nuts.
  6. Pour the batter into the casserole.
  7. Cook for 5 mins on HIGH, giving the dish a half turn halfway through the cooking time.
  8. Place the dish aside to for 5 mins to cool.
  9. Place a plate over the casserole and turn the cake over onto the plate.
  10. Turn the cake right-side up.
