Ingredients:

• 100 g – sliced Paneer
• 1 cup – chopped Spinach
• 1 cup – fresh Fenugreek (methi) leaves a pinch soda bi-carb
• 25 mm piece – Ginger
• 1 – chopped Onion
• 3 – chopped Green chillies
• 3 tsp – oil
• salt to taste

Method:

  1. Chop the spinach and fenugreek leaves finely. Add 2 tsps of water, the soda bicarb and cook on a slow flame until soft.
  2. When cooked, drain out the water and blend the leaves in a liquidizer.
  3. Chop the ginger finely.
  4. Heat the oil and fry the onion for 1 minute.
  5. Add the green chillies and ginger and fry again for a few seconds.
  6. Add the blended leaves, paneer and salt.
