Ingredients:

• Cooked Rice – 2 cup
• Tofu – 200 g
• Green curry paste – 2 tbsp
• Coconut Milk – 2/3 cup
• Pearl Eggplant – 1/2 cup(sunda kai)
• Sweet Basil – 2 to 3 tbsp
• Kafir Lime leaves – 3
• Fresh Red Chilli – 1/2
• Palm Sugar – 2 tsp
• Fish sauce – 2 to 3 tsp or salt to taste
• Oil – 1 tbsp

Method:

  1. Stir fry green curry paste with oil and coconut milk.
  2. Add pearl eggplant fry till they are tender and add fish sauce and palm sugar.
  3. Add tofu and simmer till almost dry.
  4. Add the rice, chilli, kafir lime leaf and basil.
  5. Stir till well mixed. Serve.
