Ingredients:
• 6 – Egg
• 1/2 – Coconut
• 1/2 tsp – cumin
• 1 pinch – Turmeric
• 2 tbsp – Ghee
• 2 – Onions
• 1 inch piece – ginger, sliced
• 4 – green chillies, sliced
• 2 – tomatoes, cut into cubes
• 200 g – Green peas
• 1 tbsp – Vinegar to taste
• 2 tsp – salt to taste
• 1/4 cup – coriander leaves, chopped
Method:
- Hard boil the eggs and cut into halves and keep aside
- Now grind the coconut with cumin and turmeric and extract the thick juice and keep aside
- Then add 1.5 cups of water to the coconut pulp, grind it again, and extract the remaining thin juice
- Now cut tomatoes into cubes. Keep aside
- Then warm ghee in a pan, and saute the sliced onion until brown
- Now add the thin juice with rest of the sliced masala, tomatoes, and the green peas
- Boil until the green peas are tender
- Add the salt, vinegar and the thick juice and stir well.
- Let it boil for 5 mins
- Then add the egg pieces and remove from the fire
- Serve with rice or chapattis.
