Ingredients:

• 3/4 cup – Egg substitute
• 1/4 cup – low fat plain yogurt
• 1.5 cups – light Brown sugar
• 2 tbsp – melted Butter
• 2 tbsp – Canola Oil
• 1.5 tsp – vanilla
• 1 cup – all purpose flour
• 1/2 cup – cocoa powder
• 1/2 tsp – salt
• 1/3 cup – powdered Sugar
• Margarine or vegetable oil

Method:

  1. Beat the egg substitute and yogurt with the brown sugar until quite frothy.
  2. Beat in the butter, oil, and vanilla. Mix until the sugar is mostly dissolved.
  3. Sift the dry ingredients together and use a whisk to stir them into the wet ingredients. Do so gently by hand until just mixed.
  4. Lightly oil a 7 x 11 pan and spread the batter out evenly.
  5. Bake in a preheated oven until a skewer comes out dry or with a little crumb.
  6. Let it cool completely before cutting.
  7. Sift a little powdered sugar on the top after cutting but before serving.
  8. Top with a scoop of your favourite low fat or fat-free frozen yogurt.
