Ingredients:

• 1/2 cup – biscuit/baking mix
• 2 tbsp – Sugar
• 2 tsp – baking cocoa
• 3 tbsp – Milk
• 1/2 tsp – vanilla extract
• For topping:
• 3 tbsp – Brown sugar
• 1 tbsp – baking cocoa
• 1/2 cup – boiling water
• Ice Cream or whipped Cream (optional)

Method:

  1. In a small bowl, combine baking mix, sugar, and cocoa.
  2. Stir in milk and vanilla. Spoon into two greased 8 or 10oz custard cups.
  3. For topping:
  4. Combine the brown sugar and cocoa in a bowl. Stir in boiling water. Pour over batter.
  5. Bake at 350 degrees F for 25 minutes or until a toothpick inserted in the cake layer comes out clean.
  6. Top with ice cream or whipped cream if desired.
