Ingredients:

• 4 -small Brinjals or Bitter gourd
• 2 -tomatoes
• 2 tbsp- Dhania powder
• 1 tsp -garam masala
• 1 tsp -turmeric
• 1 tsp -red chilli powder
• salt
• 4 tbsp -oil or Ghee
• 1/2 bunch -cilantro
• 1 -chopped Onion
• 4 Cloves – Garlic

Method:

  1. Take a deep-bottom pan or kadai (nonstick). Add oil and fry chopped onion and crushed garlic.
  2. Stir the onion till the colour changes into light brown.
  3. Slit the brinjals vertically without cutting the crown of the brinjal.
  4. After cutting the brinjals, immediately add them to the kadai.
  5. Add turmeric, red chilli powder, salt, dhania powder, garam masala, and tomatoes, and stir it.
  6. Cover the kadai with a perforated lid and let it cook without adding water.
  7. After the brinjals are done, add the chopped cilantro.
  8. Serve this dish with chapati or puri.
