Ingredients:

• 1 – Broccoli
• 1 – Capsicum
• 1 – Onion
• 3 Cloves – Garlic
• 1 tsp – pepper powder
• Salt as needed
• 2 tsp – Olive
• 1tbsp – Peanuts

Method:

  1. Microwave the broccoli florets for 7-10 minutes.
  2. In a pan, add oil and finely chopped garlic and after 30 seconds, add the chopped onions.
  3. When it turns pink add the cubed capsicums.
  4. When it is crunchy add the microwave broccoli florets.
  5. Add the salt and pepper and saute for 2 mins.
  6. Dry roast the peanuts remove the skin and coarsely grind it and add to the stir fry.
  7. Serve hot
