Ingredients:

• 1 – large long brinjal/eggplant
• 1/4 tsp – Turmeric powder
• 1/4 tsp – cumin powder
• 1/4 tsp – pepper powder
• 1/4 tsp – Red Chilli powder
• 1/2 tsp – salt
• Olive oil

Method:

  1. Cut the eggplant into half cm-thin slices and dust them with all the powders, salt and 2 tbsp olive oil. Toss to cover evenly.
  2. Shallow fry or grill on both sides for 2-3 minutes on medium heat.
  3. Serve hot as a snack or side dish.
  4. Alternative method 1:
  5. You can make a batter of gram flour, yogurt, salt, red chilli, turmeric, cumin and pepper powders.
  6. Coat the slices in the batter and deep-fry till golden brown.
  7. Alternative method 2:
  8. Coat the slices with a batter of corn flour and milk. Dust them with bread crumbs or semolina. Shallow fry on each side.
