Ingredients:
• 1 tbsp – oil
• 1/2 tsp – Cumin seeds (jeera)
• 1 – Onion (1 big size or 2 small size), cut into thin slices, separate each layer
• 1/2 tsp – Red Chilli powder
• 1/4 tsp – Turmeric powder
• 1 tsp – coriander powder
• 1 – Tomato (big size or 2 small size)), cut into thin slices lengthwise
• 1 – Capsicum (1 big size or 2 small size), remove seeds and cut into thin slices lengthwise
• 1/2 tsp – salt (or to taste)
Method:
- Dilute red chilli powder, turmeric powder and coriander powder in 1 tbsp of water and keep aside (spice mix).
- Heat oil in a pan. Add onion and fry, till it turns light pink in colour, on a medium heat.
- Add the diluted spice mix and stir well on a low heat, for 1 minute, until the raw smell goes and water dries up.
- Add tomato and fry, for 1 minute.
- Add capsicum and gently stir, for 1 minute.
- Add salt to taste and mix all the ingredients well. Cover with a tight lid and cook on a low heat for 10 – 12 minutes, until done or vegetables are well cooked or spices are well coated on the vegetables.
- Do not add water for cooking. Switch off the heat.
- Serve as a side dish with rotis and dal.
