Ingredients:
• Brinjal – 1, large
• 1 – big, finely chopped Onion
• 1 – big, finely chopped Tomato
• 1 tsp – Ginger-garlic paste
• Chilli powder – 1 tbsp
• Turmeric powder – 1 tsp
• Garam Masala – 1 tbsp
• 1 tsp – Tomato sauce
• Tandoori powder (optional) – 1 tbsp
• 1 tsp – Cream
• Jeera – 1 tsp
• Coriander leaves – 1/2 cup, chopped
• Salt to taste.
Method:
- Roast and mash the brinjal.
- Heat oil in pan, saute the jeera and add the onion and saute until pink.
- Now add the tomatoes to it, stir until the onion and tomatoes mix and form a smooth gravy.
- Add the ginger-garlic paste and stir it.
- Lower the flame and add chilli powder, turmeric powder, tandoori powder and garam masala. Stir it again and add salt to taste.
- Now add the tomato sauce and then the roasted brinjal to it.
- Mix well. Now add the cream on the top.
- Garnish with coriander leaves.
- Serve hot with rotis.
