
Ingredients:
• 2 cups snake gourd, diced
• 2 cups of Curd
• 0.5 cup dry Coconut (copra), grated
• 1/4 tsp Turmeric powder
• 2 tsp oil
• 1/2 tsp mustard
• 1/4 tsp Fenugreek
• 6 to 8 dry Red Chillies
• Salt to taste
• For seasoning: 1 tbsp Ghee or oil
• 1 tsp mustard
• 2 tsps black gram dal
• Coriander leaves to garnish
Method:
- Add about 3/4 cup water to snake gourd and cook with salt and turmeric.
- Heat the oil and roast mustard, fenugreek and red chillies.
- Add copra and roast till it is light brown.
- Grind all these together and add to the gourd.
- Simmer for two minutes and remove from fire.
- Beat the curd till smooth and add to the curry.
- Heat the oil for seasoning in a small fry pan. Add mustard.
- When it splutters add the dal.
- When it turns brown, remove from fire and add to the curry.
- Mix well and stir in the coriander leaves.
- Serve as an accompaniment for lunch.
