Ingredients:

• 8 – padwals (slit vertically into half)
• 1 tsp – Turmeric powder
• 1 tsp – Red Chilli powder
• 1 tsp – cumin powder
• 1 tsp – Yoghurt (beaten)
• 1 tsp – Cumin seeds
• 4 tbsp – Mustard oil
• 1 tsp – Ginger (grated)
• 1 tsp – Sugar
• salt to taste

Method:

  1. Mix the padwal pieces with 1/2 tsp of turmeric powder and salt.
  2. Heat oil in a pan and deep-fry the padwals until brown. Drain and keep aside.
  3. In the same oil, add the cumin seeds and grated ginger. Saute for a minute.
  4. Add the spices, sugar, salt and the beaten yoghurt. Mix well. Simmer until the oil leaves the sides of the pan.
  5. Add the fried padwals to the mixture and 1/2 cup of water.
  6. Simmer till the gravy thickens. Serve hot with luchi (puri) or paratha.
