Ingredients:
• 1 – onions, large, chopped in long thin slices
• 1 tsp – ginger-garlic paste
• 5 – Cloves
• 3 – cardamom, split open
• 6-7 – green chillies, split longitudinally
• Mixed fresh vegetables
• 1/2 of a Lemon juice
• 2 tbsp – coconut, grated.
• 1 bunch – Coriander leaves
• A few Mint leaves
• 1 tsp – Cumin seeds
• 1 tsp – Fennel seeds (saunf)
• 3 tbsp – oil
• salt to taste.
Method:
- Grind the coriander leaves and mint leaves with 2 green chillies, with some water (about 3 tbsp) till it becomes a fine paste.
- Cook the rice with cardamom and cloves in it.
- Heat oil in a deep pan.
- Add the fried chopped onions (having a golden brown tinge).
- Add ginger-garlic paste, fry a little more, then add the cumin, fennel seeds and split chillies.
- Then add the fresh vegetables, stir fry till they are properly cooked and add the green paste in it.
- Add a little bit of water and mix it thoroughly.
- Then add grated coconut, salt and lemon juice.
- Take it off the flame.
- Mix this in steaming hot aromatic rice.
- Garnish it with a few leaves of coriander and a split green chilli.
- Serve it with raitha.
