
Ingredients:
• 225 g – chick peas
• 1 Clove – Garlic
• 1 tsp – soya sauce
• 10 black Olives
• 1 rounded tbsp – chopped Parsley
• 1 tbsp – Lemon juice
• 8 Lettuce leaves
• pepper
• salt
Method:
- Soak chick peas in cold water, overnight.
- Drain and place in a saucepan.
- Cover with fresh water, bring to the boil, cover and simmer until tender but not mushy, about 45 mins. Drain and place in a bowl.
- Peel and crush garlic to a smooth paste with a little salt.
- Mix garlic, oil, lemon juice, a shake of pepper and soya sauce together.
- Pour over chick peas. Stone olives and chop.
- Sprinkle over chick peas with parsley.
- Mix well and chill. Wash and shred lettuce.
- Place in a salad bowl and pile chick peas on top.
