Ingredients:
• 2 large Tomatoes
• 2 tbsps – minced left over Chicken
• 1 hard boiled Egg
• 2 tsp – mayonnaise
Method:
- Chop the egg. Cut the top of the tomatoes and scoop out the centres.
- Mince the cut tomato tops. Mix with the scooped out tomato pulp, chopped egg and minced chicken.
- With a teaspoon, pile the mixture back into the tomato cups and top with mayonnaise.
- Chill before you serve.
