Ingredients:
• Lean Beef – 1 kg
• Potatoes – 500 grams
• Red Onions – 4 nos
• Ginger – 3 inch root
• Garlic – 2 bulbs
• Green chillies – 4 nos
• Turmeric powder – 1 tsp
• Chilli Powder – 3 tbsp
• Cumin Powder – ½ tsp
• Cardamom – 4 nos
• Cloves – 2 nos
• Cinnamon Stick – 2 inch
• Star-anise – 2 nos
• Bay Leaves – 4 nos
• Olive oil – 6 tbsp
• Salt – to taste
Method:
- Dice the beef and potatoes into large chunks (about 1x1inch).
- Make a paste of ginger.
- Finely slice onions (red onions have a sharper taste)
- Slit the green chillies lengthwise, do not de-seed.
- Cut the garlic cloves lengthwise.
- In a non-stick pan, heat 2 tbsp of oil. Add cardamom, cloves, cinnamon, star-anise and bay Leaves. Sauté for about 5 seconds
- Add onions and sauté till golden brown.
- Now add the green chillies, ginger paste, garlic and sauté for about 2 mins.
- Add turmeric-chilli-cumin powders and sauté for about 2-3 mins till the raw taste leaves.
- Add the above mixture to the pressure cooker with the beef and salt to taste in it. Cover and cook till 1 whistle on high flame, reduce flame and cook for another 3 whistles (about 30 mins).
- If you do not use pressure cooker; you still can cook it covered on a normal heavy bottomed pan, it would take around 15 mins to bring to boil then on medium flame around 60 mins.
- While the Beef is getting cooked, in a non-stick pan heat the remaining oil and add the diced potatoes and sauté on medium flame till golden brown and ¾ cooked.
- After the 4 whistles are done, switch off flame and allow it to cool down.
- Add the potatoes to the beef, boil for another 5 mins till the potatoes are tender and cooked.
- Serve hot with naan or rice.
