Ingredients:

• 1/2 kg – pumpkin, cut in cubes
• 2 – potatoes, cut in cubes
• 2 – onion, thinly sliced
• 2 – tomatoes, chopped
• 4 – green chillies, chopped
• 2 tsp – Cumin seeds
• 1/2 tsp – asafetida
• Spices
• 1 tsp – Turmeric powder
• 2 tsp – coriander powder
• 1 tsp – Red Chilli powder
• Salt to taste
• 2 tsp – Garam Masala
• 2 tsp – Tamarind pulp
• 1/2 cup – curry leaves, chopped
• 4 tbsp – vegetable oil

Method:

  1. Heat oil and add asafoetida and cumin seeds and stir for a minute.
  2. Add sliced onions and stir for 5 minutes till translucent.
  3. Mix all spices and salt to it.
  4. Add pumpkin cubes, potato cubes, mix and cook covered on low heat for 10-15 minutes.
  5. Finally add tamarind pulp, tomato and green chillies.
  6. Cook for another 10 minutes till tomatoes are done and oil separates.
  7. Garnish with chopped curry leaves.
  8. Serve hot.
